Cultivar Sausalito at 690 Bridgeway, Sausalito, opened in 2025, bringing a farm-to-table menu, a Tuscan wood-fired oven, and a celebrated Napa Valley wine program to the prominent corner of Bridgeway and El Portal. The kitchen emphasizes locally sourced, seasonal California ingredients with a focus on wood-fired cooking and produce sourced from regional farms and purveyors. Cultivar is the newest major dining arrival on the Sausalito waterfront, occupying a historic commercial corner that has been a gathering place for over 140 years.
HISTORY
From Cultivar, look across the street. Those two 14-foot elephant statues — Jumbo and PeeWee — have stood guard at Viña del Mar Plaza since 1916, and their story begins at the 1915 Panama-Pacific International Exposition in San Francisco. The plaza they guard was renamed Viña del Mar Plaza in 1960, reconizing Viña del Mar, Chile as Sausalito's first sister city. The bond has held for over 65 years. FEATURED WHISKEY — Wüfko Chilean Single Malt
Destilería Wüfko, Bío Bío Region, Chile · 50% ABV
"Wüfko" means "spring of water" in Mapudungún, the language of Chile's Mapuche people. Chile's pioneering single malt, crafted by distiller Evelyn Leyton from hand-malted Araucanía barley, dried with Patagonian peat, and cut to proof with spring water from the Bío Bío Coast Range. Aged 6 years in oak — but in Chile's dramatic climate, where cold winters and hot summers are extreme, that equals roughly 12 years of Scottish aging. Fruity, spiced, and delicately smoky, with a terroir unlike anywhere else on earth.
