Maple Trees

Maple trees are one of the most well-known trees, spanning across the northern hemisphere. The maple leaf is even featured on the Canadian flag. Maples belong to the family Aceraceae, and there are more than 128 species. On our campus, we have over 20 maple trees and tap them every spring to produce maple syrup! This syrup is used by our chefs to create custom dishes and sauces that everyone can enjoy! One 1/4 cup serving of maple syrup contains 72% of the daily nutritional requirement of manganese, 27% of riboflavin, 17% of copper, and 6% of calcium.
